This bacon & Swiss quiche doesn’t get much easier for breakfast, brunch, dinner or heck, even an afternoon snack. Family-tested dozens of times, this is one of my all-time favorite “go-to” recipes when I’m in the mood to make something quick, light and easy.
The refrigerated pie crust takes most of the work out this recipe and, with just a few added ingredients including Swiss Cheese, bacon and green onions, you can whip this up in no time. And, what’s especially great about quiche is that it can easily be modified depending on what your taste buds fancy. Not a fan of Swiss Cheese? Trade it out for your favorite cheese. Does a little Spinach tossed into the recipe sound good? Just add a cup of chopped fresh baby Spinach to the recipe.
Served with fresh fruit and a great salad, you’ll have a deliciously easy and quick meal your family is sure to love! And, this recipe is definitely pretty enough to serve company.
Ingredients
- 1 (9-inch) refrigerated deep dish pie crust
- 8 slices bacon, cooked and crumbled
- 1/2 cup green onions, chopped
- 6 eggs, beaten
- 1/2 teaspoon onion salt (or, to taste)
- 1 cup grated Swiss Cheese
- 2 cups half-and-half
- 1/4 teaspoon nutmeg
Instructions
- Preheat oven to 375 degrees F.
- Brown bacon in frying pan. Remove bacon from pan, cool slightly and crumble.
- Drain excess grease from pan. Add onions and cook 2-3 minutes. Remove onions from pan, set aside.
- Combine beaten eggs, onion salt, and half-and-half.
- Layer bacon, onions, and cheese on the bottom of the pie crust.
- Pour egg mixture on top.
- Sprinkle with nutmeg.
- Bake for 30-35 minutes or until egg mixture is set.
- Cut into 8 wedges.
Personal Notes:
- When making this recipe you'll find that it makes enough for one full quiche plus another smaller (less filled) quiche so it's a good idea to purchase 2 (9-inch) pie crusts
- Although the recipe calls for 8 slices of bacon, I typically use 9-10 slices of bacon. What can I say... my family loves bacon!
