Hands down, this is my absolute favorite “go-to” appetizer recipe when I need to whip up something delicious and quick!
I started making this recipe about three or four years ago and, honestly, I’ve lost count how many times I’ve made it. And, of all the times I have made it, I’ve never come across anyone who didn’t love it. In fact, most people who try it ask for the recipe and it ends up becoming one of their favorite appetizer recipes as well. It’s one of those perfect recipes that looks like you put far more work into it than you actually did and everyone seems to love. Plus, it’s pretty enough for potlucks and holidays or simple enough for an afternoon appetizer with a glass of wine.
There’s such a great blend of flavors – the Feta cheese, tomatoes and long green onions – are amazing together, but what really makes this recipe great is the kicker ingredient – the Greek seasoning. Before I made this recipe I never used Greek seasoning on anything. Now, I find myself sprinkling it on more than a few dishes. It’s just that good!
Give it a try and let me know what you think!
Ingredients
- Approximately 1/4 cup olive oil
- 3Â Roma tomatoes, seeded and diced
- 4-5Â green onions, sliced thinly (sometimes I use more... but I'm a big fan of long green onions)
- 8 ounces feta cheese, crumbled (see Note)
- 2-3 teaspoons Greek seasoning
- Fresh baguette, sliced thinly
- Note: Greek seasoning is pretty easy to find. My grocery store carries it in the spices aisle.
Instructions
- On a large platter, drizzle a thin layer of olive oil on the bottom until you have a light layering.
- Sprinkle crumbled Feta cheese on top of the olive oil.
- Add diced tomatoes and sliced green onions on top of the Feta cheese.
- Sprinkle with Greek seasoning to taste (you may want to add more or less seasoning depending on your taste).
- Mix all ingredients together before serving.
Serve with fresh baguette, thinly sliced
