Cowboy Caviar

This recipe has been a staple in my house for many years.  I always knew the fastest way to get my girls home after school (when they started driving) was to text them and tell them I was making this recipe.  

Truthfully, my son could care less if I made this or not (he’d much prefer a handful of cookies over this any day),  but my two girls couldn’t get enough of it. In fact, they’d fight over it! It’s crazy good, super easy to make and, to top it off, it’s healthy! What more could you ask for?

Ingredients

  • Ingredients
  • 1- 15 oz can corn
  • 1 can black beans
  • 2 avocados (cubed)
  • 2/3 cup chopped cilantro
  • 8 green onion stalks, sliced
  • 6 roma tomatoes
  • Dressing:
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves minced garlic
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon cumin

Instructions

Mix first 6 ingredients together. Combine dressing ingredients and pour over mixture. Serve with tortilla chips.  (That's it!)
